True to form, these grapes arrived close to the end of harvest on October 22, 2010. We put them straight into the press and pressed into a tank to settle off the gross lees. After a short cold soak, we racked down into barrels and inoculated the various barrels with three different yeasts, M2, EC118 and AMH. Post fermentation, we inoculated ½ of the barrels with Malolactic culture.
Agajanian Vineyard - This vineyard is situated high in the hills on the western slope of the Santa Lucia Mountains in Monterey County.
It is a very cool climate as the pacific fog pours in from Monterey Bay and lingers well into the afternoon, creating a very slow ripening which
preserves the great acid balance. The soil is a mixture of shale and limestone which adds a calcemic minerality to this delicious Chardonnay.
