2007 Cabernet Sauvignon, Napa Valley
PRODUCTION NOTES
These dark, flavorful grapes came to us in October of 2007. At the winery, the fruit was sorted and de-stemmed. About 20% of the berries were left whole and then transferred to stainless steel tank. In tank, the juice received a cold soak for five days. Post cold soak, we inoculated the tank with BRL97 and F15, and twice daily pumped the wine over until fermentation was finished. Pressed at dryness the resulting wine was racked to barrel for ageing.
WINEMAKER COMMENTS
Harvested by hand, the fruit originates from Holbrook Mitchell's mountainside vineyard, which is located just south west of Yountville in on the eastern slope of the Mayacamas Mountains. Planted in 1982, the vines struggle in rocky volcanic soils. The perfect site for complex Cabernet Sauvignon grapes the low yielding vineyard produces very intense flavors.
This lovely wine exhibits a solid core of dark cherry and black currant, with notes of menthol, cigar box, and violets.
